Peach preserves are an easy way to preserves summer’s fresh flavors and enjoy year round. In addition to serving at breakfast, they are delicious in glazes for meats and seafood or paired with fresh goat cheese and baguette for a wonderful appetizer.

I read in an Epicurious magazine devoted to canning that using a Vitamin C tablet crushed, can keep the color bright and keep from getting very dark brown. Do you know of this? Would be a great tip for all of us jam makers.

We made this a few weeks ago here in PA from the small peaches our trees have finally sprung!! Excellent enough that our 2 boys have it all almost gone and I am working on another batch tonight. Thanks for a new family favorite!!!
